The Cork has been serving outstanding steaks and other American classics for well over 40 years when North Boulder was was downright rural. When the restaurant was established, the “happy hour” concept was still fairly new. Now, it is a standard among restaurants — and The Cork has one of the best around with salads, hot dishes, 10 different sliders, well-priced drinks and a dynamite green chile cheeseburger.

When it comes to food, my husband and I are like Jack Sprat and his wife. with tastes as different as night and day. I like interesting ethnic foods, exquisite creations from classic French to modern American, street food and artisanal breads, cheeses and such — in fact, I like ABC (anything but chains).
He is a meat-and-potatoes guy with a limited range of veggies that he will eat, and his ethnic cuisine of choice is Mexican. And there are chains that he doesn’t mind, but tends to eat there when I’m not around. I love him anyway, and yet when I asked him where he wanted to go for his recent birthday, he was ambivalent.
I thought about The Pearl Street Steak Room, Boulder’s new steak boutique. But his birthday fell on a Sunday when it is closed. We rued the fact that The Pinyon recently closed, because he was looking forward to trying their famous fried chicken. We were vaguely heading toward The Cork, where we’d gone for one of his birthdays a few years back, but as Turley’s came into sight, he suggested that because he likes their meatloaf. A few days later, friends wanted to take him/us out for a belated birthday dinner, and the two men said they were in the mood for the $10 prime rib happy hour special.
