A little bit of special effort to start the year off.
My husband and I ended 2017 with four friends over for nibbles, champagne and CNN’s Times Square telecast last night, and we started 2018 with an “elevated” breakfast à deux this morning.
Mimosas for a morning toast, then faux buttermilk pancakes with fresh berries and warm maple syrup and chicken-apple sausages. On pretty plates too.
And here’s the recipe:
Faux Buttermilk Pancakes
3/4 cup milk
2 tablespoons white vinegar
1 cup all-purpose flour
2 tablespoons white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
pinch of salt
2 tablespoons butter, melted
- Combine milk and vinegar in a small bowl and set aside to “sour” while preparing the other ingredients.
- Combine flour, sugar, baking powder, baking soda and salt in a large bowl. Whisk egg, butter and “soured” milk. Combine the flour mixture and the wet ingredients. Whisk until lumps are gone.
- Spray a griddle with non-stick spray skillet over medium-high heat. Pour batter onto the griddle in small ladles-full. Cook until bubbles appear on the surface. Flip and cook until browned on the other side.Yield: About 5 to 6 thick pancakes.
