Fresh Thymes opening at Boulder’s Steelyards
Last March, I was invited to preview the food at the planned Fresh Thymes Eatery. My post described the concept of a hypo-allergenic restaurant that provides those food allergies and autoimmune disease with tasty, nutritious and healthful food. And today, Saturday, August 24, the restaurant is opening.
Another departure from the norm is that Fresh Thymes Eatery operates a CSA model (Community Supported Agriculture) model. Fresh Thymes, the brainchild of Christine Ruch, is an eclectic and casual farm-to-table restaurant focusing on food that is simple, seasonal and won’t make people with sensitivity or allergy issues sick. I took some food and food product pictures at the preview but have no idea where my notes are. Of course, what was is season last March is not in season now, but these photographs are from that preview.
